Dukkah (Egyptian Nut & Spice Mix)
An incredible fusion of nuts, herbs, seeds and spices. Toasted nuts and seeds are ground down to a coarse powder that you’ll want to sprinkle over just about everything.
It has an interesting flavour, somewhat smoky, salty and nutty.
¼ cup hazelnuts
3 Tbsp sesame seeds
3 Tbsp coriander seeds
2 Tbsp pistachios
2 Tbsp cashews
1 Tbsp cumin seeds
½ Tbsp fennel seeds
1 tsp coarse salt
½ tsp dried mint
¼ tsp sugar
Pinch red chilli flakes
Combine the above ingredients and dry fry for a couple of minutes. Then in a food processor or coffee grinder, pulse until a coarse spice mix forms. This spice blend will keep in an airtight glass jar for 2-4 weeks.
For a lovely side veg, combine broccoli, cauliflower, baby tomatoes halved, finely chopped dates, pumpkin seeds and sunflower seeds with a sprinkle of Dukkah spice. Drizzle over a little olive oil and bake in the oven at 180°C for 25 minutes.
