Turkish Feta & Potato Rolls (Fırında Sigara Böreği)
Preheated oven at 200°C and prepare a baking sheet
Ingredients:
1 pack of Filo pastry cut into triangles (about 20cm on the wide side)
1/2 cup olive oil
2 Tbsp yoghurt
2 eggs (put aside one egg yolk to brush the tops)
Stuffing:
2 to 3 medium size potatoes, peeled and boiled
1/2 cup crumbled feta
1/2 cup fresh parsley chopped
1 tsp chilli flakes
Ground black pepper to taste
Sesame seeds to sprinkle on before baking
Method:
-Mash the potato, feta, parsley, and spices with the back of a fork.
-Mix olive oil, yoghurt, and eggs(remember to save one egg yolk for brushing).
-Put one layer of filo pastry and brush with the oily yoghurt mixture. Put the second one on top and brush it again -Place one spoonful of stuffing on the wide side of filo pastry. Fold the sides and roll.
-Place them the prepared oven tray.
-Lastly, brush the top of rolls and sprinkle lightly sesame seeds.
-Bake in a preheated oven for 20-30 minutes until they’re golden brown.
